200 ml mandarin juice (from 3-4 mandarins)
75 ml Limoncello (Italian lemon liqueur)
Juice of 1 lemon
1 tbsp brown sugar
500 ml chilled Prosecco
Instructions:
1. Mix mandarin juice with Limoncello and lemon juice. Stir in brown sugar until well combined.
2. Divide the mixture into four rounded glasses (approximately 250 ml each).
3. Gently fill each glass with chilled Prosecco.

Pistachio Mandarin Salad with Caramel Crunch
Ingredients:
100 g sugar
40 g pistachio nuts
25 g butter
80 g dandelion greens
50 g watercress
½ head chicory
4 mandarins
4 tbsp white wine vinegar
Salt
Freshly ground black pepper
3 tbsp pumpkin seed oil
Instructions:
1. In a pan over medium heat, caramelize the sugar with 1 teaspoon of water until it turns golden brown. Mix the pistachios into the melted butter and stir well. Pour the mixture onto parchment paper, spread it evenly, and let it cool completely.
2. Wash and dry the dandelion greens and watercress. Optionally, chop them slightly. Wash the chicory and cut it into pieces. Peel the mandarins with a large knife, removing any white pith, and slice them. Whisk together the white wine vinegar, salt, pepper, and oil to prepare the dressing. Adjust the seasoning to taste.

Ingredients:
50 gr melted butter
70 gr ladyfingers, crumbled
500 gr low-fat yogurt
100 ml 30% fat cream
1 can mandarins
30 gr sugar
Zest of 1 lemon
6 sheets gelatin
1 packet cake glaze powder
Some orange liqueur
50 gr bittersweet chocolate
Preparation:
Time: 25 min
Baking Time: 10 min
Chill Time: 3 hrs 10 min
Total Time:3 hrs 45 min
Instructions:
1. Place small cake rings (7.5 cm, or you can use cut grey tubes from the plumbing section) on a baking paper-covered board. Melt the butter and mix it with the crumbled spoon biscuits. Fill the rings with the mixture, pressing it down firmly to create a layer about 1 cm thick.
2. Mix the yogurt with the cream, lemon zest, and sugar. Dissolve the gelatin according to the instructions and stir it into the yogurt mixture. Fill the molds with this mixture and refrigerate for at least 3 hours.
3. Drain the mandarin oranges, and fill the juice with orange liqueur up to 250 ml. Place 3 mandarin orange slices on each mini cake, and prepare the cake glaze with the juice, swiftly coating the cakes.
4. Melt the chocolate in a double boiler, fill it into a plastic bag, cut a small hole in one corner, and create a zigzag pattern on baking paper. Let it cool and insert it into the cake glaze.
